Uncle Mitch's favorite Chocolate Oatmeal cookies..Yum!

2 cups sugar
1/2 cups milk
1 stick margarine (don't use diet or reduced calorie)
3 Tablespoon cocoa
1 teaspoon vanilla
1/2 teaspoon salt
3 c. quick oats
1/2 cup nuts (if you like, I don't usually use)
1 c. coconut

Combine sugar, milk, margarine, cocoa and vanilla in saucepan.  Bring to a boil slowly, stirring constantly and boil for one minute.  Remove from heat.  Add oatmeal, coconut and nuts.  Quickly stir until thick enough to drop by teaspoonfuls on waxed paper.  Let cool to set up.

*** May not set up very well if you make on a rainy day.
*** It's been a long time since I've made them, but I think I remember using another cup of oatmeal if I didn't have coconut.

These are so yummy! They are also so easy and super quick to make. Enjoy!

Lemon Bars!

  • 1 1/8 cups all-purpose flour
  • 1/3 cup confectioners' sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 2/3 cup confectioners' sugar
  • 1/3 cup fresh lemon juice
  • 1 1/2 teaspoons grated lemon zest
  • 1/4 teaspoon baking powder

Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together the flour, 1/3 cup of confectioners' sugar, and butter until butter is in very small crumbs. Press into the bottom of a 11x7 inch pan.
  2. Bake for 25 minutes in the preheated oven, or until firm and lightly browned. While the crust is baking, whisk together the eggs, 2/3 cup of confectioners' sugar, lemon juice and lemon zest in a medium bowl. Just before the crust is done, stir in the baking powder. Pour over the crust while it is hot, and return to the oven.
  3. Bake for another 25 minutes in the preheated oven, until set. Dust with remaining confectioners' sugar when cool.

SO easy to make! I love lemon bars! These to me just didn't taste so "lemony". So, I would add almost twice the amount of lemon juice. Remember to wisk well and distribute evenly. Enjoy!
